Melt Chocolate
Chop the dark Belgian chocolate into small pieces and place them in a heatproof bowl along with the unsalted butter. Melt them together over a double boiler, stirring occasionally until smooth. Remove from heat and let it cool slightly.
Prepare Egg Mixture
In a separate bowl, whisk the eggs and granulated sugar together until the mixture is pale and fluffy. This will take about 5 minutes of vigorous whisking.
Combine Mixtures
Gradually add the melted chocolate mixture to the egg mixture, stirring gently until fully combined. Make sure the chocolate is not too hot to avoid cooking the eggs.
Whip Cream

Fold in Cream

Chill Mousse
