Combine and macerate
In a large pitcher (at least 2 liters), add the sliced orange, lemon, and apple. Sprinkle the granulated sugar over the fruit and gently muddle with the back of a spoon 6–8 times to release juices and dissolve the sugar.

Add alcohol and chill
Pour the red wine, brandy, and orange liqueur into the pitcher. Stir to combine, then cover and refrigerate for at least 4 hours and up to 24 hours. The longer it rests, the more developed the flavors; 8–12 hours is ideal for classes so students taste the fruit infusion.

Finish and serve
When ready to serve, add the club soda (or sparkling water) and gently stir. Fill glasses with ice, pour sangria over ice including some fruit pieces, and garnish with a sprig of fresh mint if desired.

Prep fruit and ginger
Wash and slice the peaches into thin wedges, discarding pits. Thinly slice half a lemon. Peel and very thinly slice or grate the fresh ginger (about 1 tablespoon grated).

Add wine and chill
Pour the white wine into the pitcher, stir to combine, then cover and refrigerate for at least 2–4 hours (4–8 hours preferred). The ginger will infuse a subtle warmth; taste at 2 hours and adjust sweetness if needed.

Carbonate and serve
Just before serving, add the ginger ale or sparkling water to the pitcher and stir gently. Fill glasses with ice, pour sangria into glasses including peach slices, and garnish with a thin lemon wheel.
Sparkling Rosé Berry Sangria (Low-alcohol option)

Prep berries and citrus
Rinse the strawberries, raspberries, and blueberries. Hull and halve the strawberries. Thinly slice the half lemon.

Build flavors
In a pitcher, combine the berries and lemon slices. Add the simple syrup (start with the stated amount; adjust to taste after resting). Gently muddle a few times to release juices but not so much that the berries become pulpy.

Add rosé and chill briefly
Pour the rosé over the fruit, stir gently, then refrigerate for 1–2 hours. Because this is sparkling-forward and lower alcohol, shorter maceration (1 hour) keeps fruit bright and fresh.

Top with bubbles and serve
When ready to serve, add the club soda or elderflower tonic to taste (start with 1 cup). Fill glasses with ice, pour sangria into each glass including berries, and garnish with basil or mint leaves.
