Soak
Place the cut fries in a large bowl and cover with 2 cups cold water (add ice if your kitchen is warm). Soak for at least 30 minutes and up to 2 hours to remove excess starch. This produces crispier fries.

Dry and toss with cornstarch
Drain the fries and pat them thoroughly dry with clean kitchen towels or paper towels. Transfer to a large bowl and sprinkle 1 tablespoon cornstarch over the fries; toss to coat lightly and evenly. The cornstarch helps create a crisp exterior.

First fry (blanch)
Pour oil into a heavy-bottomed pot or deep fryer to a depth of about 2-3 inches (approximately 2 cups). Heat the oil to 325°F (163°C). Working in a single layer or small batches, fry the fries for 3–4 minutes until they are just beginning to soften and pale (do not brown). Remove with a slotted spoon or spider and drain on a wire rack or paper towels. Let rest for 5 minutes.

Final fry
Increase the oil temperature to 375°F (190°C). Fry the blanched fries in batches for 2–3 minutes until golden brown and crisp. Remove and immediately drain on a wire rack or paper towels.

Season while hot
While the fries are still hot, transfer them to a large mixing bowl or keep them on the rack and evenly sprinkle with 1 teaspoon kosher salt, 1 teaspoon freshly ground black pepper, and 1/2 teaspoon garlic powder. Toss gently to distribute the seasoning so it adheres to the hot fries.

Sprinkle 1/4 teaspoon flaky sea salt over the fries for texture and, if using, 1 tablespoon finely chopped fresh parsley for color and a light herbal note. Serve immediately for best crispness as a happy hour snack.
