    Activate yeast and mix dough

    In a small bowl combine warm water and active dry yeast. Let sit 5–7 minutes until foamy. In a medium bowl mix flour and salt, make a well and add yeast mixture and 1 tablespoon olive oil. Stir until a shaggy dough forms.

    Knead and rest

    Turn dough onto a lightly floured surface and knead 4–5 minutes until smooth and elastic (or knead in a stand mixer for 3 minutes). Form into a ball, coat lightly with oil, place in a bowl, cover, and let rest in a warm place 30–45 minutes until slightly puffy.

    Preheat oven

    About 20 minutes before baking, place a pizza stone or heavy baking sheet in the oven and preheat to 500°F (or the highest your oven allows). If using a pizza peel, dust with a little flour or semolina.

    Cook onions

    While dough rests, heat butter and olive oil in a medium skillet over medium-low heat. Add thinly sliced onions, salt, and sugar. Cook, stirring occasionally, 20–25 minutes until deep golden and soft. If they start to brown too quickly, reduce heat. Remove from heat and set aside.

    Sauté mushrooms

    Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add sliced mushrooms and spread in a single layer; cook without moving 2–3 minutes to develop color, then stir and add minced garlic and thyme. Cook another 2–3 minutes until mushrooms are golden and any released liquid has mostly evaporated. Season with 1/8 tsp salt and 1/8 tsp pepper. Remove from heat and set aside.

    Shape dough

    Once dough has rested, punch down gently and transfer to a floured surface. Using your hands or a rolling pin, shape into a 10–12 inch round (or rectangle to fit your pan), leaving a slightly thicker rim for the crust. Transfer to a pizza peel or inverted baking sheet dusted with flour/semolina.

    Assemble pizza

    Evenly sprinkle the shredded mozzarella over the stretched dough, leaving the rim bare. Distribute caramelized onions in thin ribbons over the mozzarella. Scatter the sautéed mushrooms across the pizza. Crumble the goat cheese evenly in small dollops over the top. Sprinkle the remaining 1/8 tsp salt and 1/8 tsp pepper evenly.

    Bake

    Slide the pizza onto the preheated pizza stone or baking sheet and bake 8–12 minutes until crust is golden and cheese is bubbly and lightly browned. Baking time will vary with oven temperature; watch for a crisp, blistered crust.

    Finish with truffle oil

    Remove pizza from oven. Immediately drizzle truffle oil evenly over the hot pizza (about 1 teaspoon). Let rest 1–2 minutes.

    Garnish and serve

    Top with optional arugula or microgreens and a light sprinkle of red pepper flakes if using. Slice into 6 pieces and serve hot.
