    In a medium heavy-bottomed saucepan over medium heat, melt 4 tablespoons unsalted butter. Add 4 tablespoons all-purpose flour and whisk continuously for 1–2 minutes until the raw flour smell is gone and the mixture is bubbly but not browned.

    Slowly pour in 2 cups whole milk and 1 cup heavy cream in a steady stream while whisking to prevent lumps. Increase heat to medium-high and bring the mixture to a gentle simmer, whisking frequently, until it thickens slightly, about 3–5 minutes.

    Reduce heat to low. Whisk in 1 teaspoon dry mustard, 1 teaspoon ground black pepper, 1 teaspoon hot sauce (optional), and 1 teaspoon salt. Add 2 ounces softened cream cheese and whisk until fully melted and incorporated.

    Remove the sauce from heat. Stir in 3 cups shredded sharp cheddar and 1 cup shredded white cheddar (or Gruyère) in small handfuls, stirring until each addition melts and creates a smooth sauce. If the sauce seems too thick, whisk in up to 1/2 cup of the reserved pasta cooking water, a few tablespoons at a time, until you reach desired consistency.

Combine and Bake
