Preheat & prepare
Preheat oven to 500°F (260°C). If using a pizza stone, place it in the oven while it heats. Lightly oil a rimmed baking sheet or use a pizza peel dusted with flour or cornmeal.

Shape the dough
On a lightly floured surface (use the 0.25 cups flour), stretch or roll the pizza dough into a 10–12 inch round. Aim for an even thickness with a slightly thicker rim for the crust. Transfer dough to the prepared baking sheet or a well-floured pizza peel.

Brush the dough lightly with 1 tablespoon olive oil, especially around the outer rim. This helps the crust brown and adds flavor.

Combine the tomato pizza sauce, minced garlic, dried oregano, and crushed red pepper flakes in a small bowl and stir to combine.

Spread 3/4 to 1 cup of the sauce evenly over the stretched dough, leaving a 1/2-inch border for the crust.

Distribute the mozzarella evenly over the sauced dough. Sprinkle the grated parmesan on top of the mozzarella for added flavor and browning.

If making multiple individual pizzas at the table, let each person choose their toppings and assemble their own pies on pre-stretched dough rounds following the same steps.
Baking & Finishing

Bake the pizza on the stone or baking sheet in the preheated oven for 8–12 minutes, rotating halfway through, until the crust is golden and the cheese is bubbly and browned in spots. Thinner dough and hotter ovens will need less time; thicker dough needs more.

Remove pizza from oven. Immediately drizzle remaining 1 tablespoon olive oil around the crust if desired. Scatter fresh basil leaves and/or arugula over the hot pizza. Season with sea salt and freshly ground black pepper to taste. If you like heat, finish with red pepper oil or chili oil (about 1 tsp).

Let the pizza rest 2 minutes, then slice and serve hot. Repeat assembly and bake process for additional pies.
