    Prepare scallops

    Pat scallops thoroughly dry with paper towels. Remove and discard any small side muscle if present. Season both sides with kosher salt and freshly ground black pepper. Lightly dust each scallop with the optional flour, shaking off excess—this helps create a golden crust but is optional if scallops are perfectly dry.

    Sear scallops

    Heat a large stainless-steel or cast-iron skillet over medium-high heat until very hot. Add 1 tablespoon olive oil and 2 tablespoons unsalted butter; swirl to melt and foam subsides. Working in a single layer (do not crowd), place scallops in the pan and sear without moving for 1.5–2 minutes until deep golden brown on the bottom. Flip scallops and sear the other side 1–1.5 minutes until just opaque in the center. Remove scallops to a warm plate and tent loosely with foil while you make the sauce. Reserve pan with fond for the sauce.

Limoncello Cream Sauce

    Cook shallot and deglaze

    Reduce heat to medium. Add 2 tablespoons unsalted butter to the same skillet with the browned bits. Add the finely minced shallot and sauté 30–45 seconds until fragrant and softened but not browned. Pour in 1 tablespoon dry white wine to deglaze, scraping up brown bits with a wooden spoon; cook about 30 seconds until wine reduces slightly.

    Flambé or simmer limoncello (optional step)

    Add 3 tablespoons limoncello to the pan. If you are comfortable and want to burn off some alcohol flavor, carefully ignite the limoncello with a long lighter to flambé and let the flames subside (stand back and keep a lid nearby). Alternatively, simmer the limoncello for 30–45 seconds to reduce alcohol without igniting.

    Finish sauce

    Stir in 1 tablespoon lemon juice, 1 tablespoon vegetable or fish stock, and 3 tablespoons heavy cream. Bring to a gentle simmer and cook 1–2 minutes until sauce slightly thickens. Stir in 1 teaspoon lemon zest, 1 teaspoon salt, and 1/2 teaspoon freshly ground black pepper. Taste and adjust seasoning — add a pinch more salt or lemon juice if desired. Keep sauce warm on lowest heat but do not boil aggressively to prevent cream from separating.

    Mount with butter (optional)

    For a silkier finish, remove the pan from heat and swirl in an extra tablespoon of cold unsalted butter until incorporated.

Finish & Serve

    Return scallops to the pan for 15–30 seconds to coat in the warm sauce (optional)—or arrange scallops on warmed appetizer plates.

    Spoon the limoncello cream sauce over and around the scallops (about 1–2 tablespoons sauce per scallop). Drizzle with 1 teaspoon extra-virgin olive oil, sprinkle 2 teaspoons chopped flat-leaf parsley, and top with microgreens or baby arugula if using.

    Serve immediately while scallops are warm and the sauce is silky. Recommended as an antipasti portion: 3–4 scallops per person.
