Prepare oat milk

In a high-speed blender, combine 1 cup rolled oats with 4 cups water. Blend on high for 1-2 minutes until smooth. Strain through a fine-mesh sieve or nut milk bag into a bowl to remove the oat pulp. Reserve the liquid as oat milk.

Create the chocolate base

Whisk 0.333 cup cocoa powder, 0.5 cup sugar, 0.25 cup maple syrup, 1 teaspoon vanilla extract, and 0.25 teaspoon salt into the strained oat milk until completely dissolved and smooth. Chill the mixture in the refrigerator for at least 2 hours, or overnight for deeper flavor.

Chill the base thoroughly

After chilling, ensure the base is very cold (around 40°F / 4°C). This helps achieve a smoother sorbet texture when churned.

Churn or freeze the sorbet

If using an ice cream maker, pour the cold base into the machine and churn according to the manufacturer’s instructions until it resembles soft sorbet, about 20–30 minutes. If you don’t have an ice cream maker, transfer the base to a shallow pan and freeze, stirring vigorously with a fork every 30–45 minutes for about 4–6 hours to break up ice crystals.

Freeze to firm and serve

Once churned to a scoopable consistency, transfer the sorbet to a container and freeze for at least 2 hours to firm further. Serve scoops in bowls or cones. Optional: dust with a little cocoa powder or grate dark chocolate over the top for garnish.
