Prepare the Ribs

Preheat your oven to 150°C (300°F). Rinse the pork ribs and pat them dry with paper towels.

Make the Marinade

In a bowl, combine guava paste, honey, soy sauce, apple cider vinegar, minced garlic, black pepper, salt, smoked paprika, and cayenne pepper. Mix well until smooth.

Marinate the Ribs

Rub the olive oil over the ribs, then coat them generously with the guava marinade. Cover and let marinate in the refrigerator for at least 2 hours, preferably overnight.

Cook the Ribs

Place the marinated ribs on a baking sheet lined with foil. Cover with another piece of foil and bake in the preheated oven for 2.5 to 3 hours, until tender.

Finish on the Grill

Preheat a grill or barbecue. Remove the ribs from the oven and transfer them to the grill. Grill for 5-10 minutes on each side, brushing with more guava marinade, until caramelized and slightly charred.

Serve

Let the ribs rest for 10 minutes before slicing. Serve with additional guava sauce on the side.
