Prepare coating stations

In three shallow bowls set side by side, place flour seasoned with 1/2 tsp salt and 1/4 tsp black pepper in the first, beaten eggs in the second, and panko breadcrumbs in the third. Spread the panko on a plate so it’s easy to press pieces into it.

Heat oil

Pour 1 cup neutral oil into a heavy skillet to reach about 1/4" depth and heat over medium-high until it reaches 350°F (175°C). If you do not have a thermometer, test by dropping a few panko crumbs; they should sizzle immediately and turn golden in about 20–30 seconds.

Coat main component

Working in batches to avoid crowding, pat your lion's mane pieces dry and, if using, tear into 1–1.5" wide 'cutlet' pieces. For chicken, use pounded breasts cut into 3–4 strips. Lightly dust each piece with flour, dip into beaten egg, then press firmly into the panko to fully coat. Place coated pieces on a tray while you finish the rest.

Fry until golden

Fry coated pieces in batches for 2–3 minutes per side for lion's mane (or 3–4 minutes per side for chicken), turning once, until deeply golden and crisp and an instant-read thermometer reads 165°F (74°C) for chicken. Transfer to a wire rack set over a baking sheet to drain and keep warm in a 200°F (95°C) oven if needed.

If using lion's mane mushrooms: gently pull or cut into thick 'steak' strips, toss with 1 tbs olive oil, and season lightly with 1/4 tsp salt. Sear in a hot skillet 2–3 minutes per side to render any moisture before dredging and frying (this improves texture and helps the panko adhere). If using Caldecott chicken: pat the chicken dry, season with 1/4 tsp salt and 1/8 tsp pepper and use 1 tsp oil to sear briefly only if you prefer a short pan-sear before breading; otherwise proceed directly to the coating step.

Permain Apple & Kohlrabi Salad

In a medium bowl, combine the thinly sliced apple and julienned kohlrabi. Add 2 tbs fresh lime juice, 1 tsp sesame oil, 1 tsp rice wine vinegar, 1/2 tsp sugar or honey, and 1/4 tsp salt. Toss gently to coat and let sit for 5–10 minutes to marry flavors. Taste and adjust acidity or salt as needed.

Sesame-Cashew Chili Crunch

In a small bowl mix 2 tsp toasted sesame seeds with 1/4 cup roughly chopped roasted cashews, 1/2 tsp chili flakes (or to taste), 1 tsp light soy sauce and 1 tsp lime zest. Stir until the soy draws the pieces together slightly into a crunchy, fragrant mixture. If you prefer a finer texture, pulse briefly in a food processor but do not turn into a paste.

Finishing & Plating

Place a small bed (about 1/3 cup) of the apple-kohlrabi salad on each plate. Arrange 3–4 pieces of the fried lion's mane or chicken atop the salad in a staggered stack. Sprinkle each plate with 1–2 tsp of the sesame-cashew chili crunch, scattering evenly over the cutlets and salad.

Garnish with roughly 1 tbsp chopped cilantro or a few microgreens and a light dusting (pinch) of fine sea salt. Serve immediately with lime wedges on the side for squeezing.
