Prepare aromatics and vegetable

Finely mince the green onions. If using cabbage or bok choy, shred finely and squeeze in a clean towel or paper towel to remove excess moisture; you should have about 50 g dry shredded vegetable.

Mix filling

In a medium bowl, combine ground meat (or tofu), minced garlic, grated ginger, green onions, shredded cabbage/bok choy, soy sauce, sesame oil, rice vinegar, salt, and black pepper. Mix thoroughly with a spoon or your hands until the mixture is cohesive and slightly sticky (about 1–2 minutes). Cover and chill for 10 minutes to let flavors meld.

Prepare workspace

Lightly dust a clean work surface with cornstarch or flour to prevent sticking. Place cold water in a small bowl for sealing wrappers.

Fill and seal dumplings

Lay one dumpling wrapper flat in your palm. Spoon approximately 1 tablespoon (about 15 g) of filling into the center — adjust so the wrapper can be sealed without overstuffing. Brush the wrapper edge with a little cold water. Fold the wrapper over the filling to form a half-moon and press to seal the center. Create small pleats along the sealed edge, pressing each pleat firmly to avoid air pockets. Repeat to make 18 dumplings (this recipe yields about 6 servings if serving 3 dumplings per person). Keep finished dumplings on a lightly dusted tray so they don't stick.

Heat oil

Pour oil into a deep skillet or medium saucepan to a depth of about 1.5–2 inches (4–5 cm). Heat oil over medium-high heat until it reaches 175–180°C (350–360°F) or until a small piece of wrapper sizzles and browns in about 30–40 seconds. If you don't have a thermometer, test carefully with one dumpling.

Fry dumplings

Working in batches to avoid crowding, gently lower 4–6 dumplings into the hot oil seam-side up using tongs or a slotted spoon. Fry, turning occasionally, until golden brown and crisp on all sides, about 3–4 minutes per batch depending on oil temperature and dumpling thickness. Adjust heat to maintain 175–180°C; lower if browning too fast. Use a slotted spoon to remove dumplings and transfer to a paper-towel-lined plate to drain.

Finish and rest

Allow dumplings to rest 1–2 minutes on the paper towel to drain excess oil. Serve immediately while hot and crispy.

Dipping sauce (optional)

Whisk together soy sauce, rice vinegar, sesame oil, chili flakes (or a splash of chile oil) and sugar until sugar dissolves. Taste and adjust seasoning. Serve in small bowls alongside dumplings.
