Prepare filling

In a medium bowl, combine the softened cream cheese and chopped crab. Use a fork to break up lumps and mix until smooth and evenly distributed.

Add the finely sliced green onions, soy sauce, sesame oil, sugar, garlic powder, and white pepper to the bowl. Stir thoroughly until the mixture is homogeneous. Taste and adjust seasoning lightly (a dash more soy or a pinch more sugar) if desired. Keep chilled until ready to fill.

Assemble wontons

Set up an assembly station: a small bowl of cold water for sealing, a clean work surface, and a plate dusted lightly with flour or lined with parchment to hold finished wontons.

Place one wonton wrapper on the work surface with one corner pointing toward you (diamond shape). Spoon about 1 teaspoon of the crab-cream cheese filling into the center of the wrapper. Avoid overfilling to prevent bursting while frying.

Dip your finger into the bowl of water and lightly moisten the edges of the wrapper. Fold the wrapper in half to form a triangle, pressing gently to push out air and seal edges tightly. For the classic ‘purse’ shape, bring the two outer corners of the triangle together and press to seal, using a drop of water as glue. Alternatively, leave as triangles or pleat edges for a decorative seal. Place each assembled wonton on the prepared plate. Repeat until all wrappers are filled.

Frying

Pour oil into a deep, heavy-bottomed pot or a deep-fryer so there is at least 2–3 inches of oil. Heat oil over medium-high heat to 350°F (175°C). If you don't have a thermometer, test by dropping a small piece of wonton wrapper into the oil — it should sizzle and float, turning golden in about 30–60 seconds.

Working in small batches (6–8 at a time depending on pot size), gently lower the assembled wontons into the hot oil using a slotted spoon or spider. Do not overcrowd the pot. Fry, turning occasionally, until golden brown and crisp, about 2–3 minutes per batch.

Use a slotted spoon to transfer cooked wontons to a wire rack set over a baking sheet or to paper towels to drain briefly. Keep finished wontons warm in a low oven (200°F / 95°C) while you fry remaining batches.

Sweet chili dipping sauce

If using store-bought sweet chili sauce, transfer to a small bowl and stir in 1 tablespoon rice vinegar to brighten the flavor (optional). For homemade: combine 1 cup sweet chili sauce, 1 tablespoon rice vinegar, and adjust to taste; stir until combined.

Serve

Arrange warm Crab Rangoon on a platter. Sprinkle optional sesame seeds and sliced green onion over the wontons and sauce for garnish. Serve immediately with the sweet chili dipping sauce on the side.

Leftovers: store cooled wontons in an airtight container in the refrigerator for up to 2 days. Re-crisp in a 375°F (190°C) oven for 6–8 minutes if desired.
