Prepare the Base

In a medium saucepan, combine the heavy cream, whole milk, sugar, and salt. Heat over medium heat, stirring occasionally until the mixture is warm and the sugar has dissolved.

Whisk Egg Yolks

In a separate bowl, whisk the egg yolks until they are pale and thick. Gradually whisk in about a cup of the warm milk mixture to temper the yolks.

Combine and Cook

Pour the egg yolk mixture back into the saucepan with the remaining warm milk mixture. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 5-7 minutes). Do not let it boil.

Strain and Chill

Strain the mixture through a fine mesh sieve into a bowl to remove any cooked egg bits. Stir in the vanilla extract and let the mixture cool to room temperature. Then cover and refrigerate for at least 4 hours or overnight.

Churn the Ice Cream

Once the mixture is chilled, churn in an ice cream maker according to the manufacturer’s instructions until it reaches a soft-serve consistency.

Freeze

Transfer the ice cream to an airtight container and freeze for at least 4 hours to firm up before serving.
