Wontons Preparation

Prepare the Mushroom Filling

Finely chop the wild mushrooms and place them in a bowl. Add minced garlic, chopped green onion, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are combined.

Assemble the Wontons

Lay a wonton wrapper on a clean surface. Place a teaspoon of the mushroom mixture in the center. Moisten the edges of the wrapper with water and fold it over to create a triangle shape, pressing the edges to seal. Repeat until all wrappers and filling are used.

Cook the Wontons

Bring a large pot of water to a gentle boil. Carefully drop in the wontons, a few at a time, and cook for about 4-5 minutes or until they float to the surface. Remove with a slotted spoon and set aside.

Make the Coulis

In a small saucepan, combine grated ginger, chopped lemongrass, vegetable broth, and coconut milk. Bring to a simmer and cook for about 10 minutes. Use an immersion blender to puree the mixture until smooth. Add lime juice and salt to taste, stirring well.

Serve the Wontons

Place the cooked wontons on a serving plate and drizzle with the ginger and lemongrass coulis. Enjoy warm.
