Make batter

In a blender or large bowl, combine 1 cup all-purpose flour, 2 large eggs, 1 cup whole milk, 1/4 cup water, 2 tablespoons melted butter and 1/4 teaspoon salt. Blend or whisk until completely smooth and slightly frothy, about 30–45 seconds. Let the batter rest 15–30 minutes at room temperature (or refrigerate up to 2 hours) to relax the gluten and reduce bubbles.

Adjust consistency

After resting, the batter should be thin and pourable (similar to heavy cream). If too thick, whisk in 1–2 tablespoons water or milk until it reaches that consistency.

Cook meat choice

Choose one protein: bacon, pork sausage, ham or turkey sausage. For bacon: cook 2 slices in a skillet over medium heat until crisp, 6–8 minutes, flipping occasionally; drain on paper towel and keep warm. For pork sausage (links or patties): cook over medium heat 8–10 minutes, until internal temperature reaches 160°F/71°C; drain and keep warm. For turkey sausage (links/patties): cook 8–10 minutes until browned and cooked through, internal 165°F/74°C. For deli ham: warm 1–2 minutes per side in the skillet just to heat through. Set the chosen protein aside; if using links/patties, slice or crumble into bite-sized pieces.

Prepare eggs for filling

In a small bowl, beat 2 large eggs with 1/8 teaspoon salt and 1/16 teaspoon black pepper until combined. Heat a nonstick skillet over medium-low and add 1 tablespoon unsalted butter or oil. Pour the beaten eggs into the skillet and scramble gently, stirring slowly, until softly set but still moist, about 1–2 minutes. Remove from heat immediately — the eggs will finish cooking in the crepe.

Heat the pan

Heat an 8- to 10-inch nonstick skillet or crepe pan over medium heat. Lightly brush or wipe with a little melted butter or oil (about 1/2 teaspoon) between crepes to prevent sticking.

Cook the crepe

Pour about 1/3 cup of batter into the center of the hot pan and immediately tilt and swirl the pan to spread the batter into a thin circle (about 8 inches). Cook until the edges lift and the underside is light golden, about 45–60 seconds. Flip with a spatula and cook the second side 20–30 seconds until just set. Reduce heat slightly if browning too quickly.

Add filling

With the crepe still in the pan, sprinkle about 1/2 cup shredded cheddar evenly over the center. Top the cheese with the warm scrambled eggs (all of the prepared eggs for the order) and then add the chosen protein (2 slices bacon crumbled, or sausage/ham/turkey portions). The cheese will start to melt from the warm ingredients.

Fold and finish

Fold the crepe edges over the filling (fold in half or into thirds) to enclose the filling. Press gently and cook 15–30 seconds to ensure cheese is melted and filling is heated through. If desired, add 1/2 tablespoon butter to the pan and spoon over the folded crepe for extra flavor.

Serve

Slide the crepe onto a plate, garnish with chopped chives or parsley if using, and serve immediately. Repeat the crepe cooking and assembly steps for additional servings.

Optional: dot with a little extra butter and sprinkle chopped chives or parsley over the top for color. Serve hot.
