Mix dry ingredients

In a medium bowl whisk together the all-purpose flour, granulated sugar and a pinch of salt until evenly combined.

Combine wet ingredients

In a separate bowl whisk the eggs, milk, water, melted butter and vanilla extract until smooth.

Make batter

Slowly pour the wet mixture into the dry ingredients while whisking to avoid lumps. Continue whisking until smooth and slightly runny. Let the batter rest at room temperature for 15–30 minutes (this relaxes the gluten and yields tender crepes). If batter thickens after resting, thin with 1–2 tablespoons milk or water to reach a pourable consistency (it should coat the back of a spoon thinly).

Heat pan

Heat a nonstick skillet or 8–10 inch crepe pan over medium heat until hot. Lightly brush with the reserved 1 teaspoon butter and wipe excess with a paper towel.

Cook crepes

Pour about 1/4 cup of batter into the center of the pan and immediately tilt and swirl the pan to spread the batter into a thin, even circle. Cook 30–60 seconds until the edges look set and the bottom is lightly golden. Use a thin spatula to flip and cook the second side 10–20 seconds. Transfer cooked crepe to a plate and stack loosely with a clean kitchen towel to keep warm. Repeat with remaining batter, brushing the pan with butter as needed. This recipe yields about 6–8 crepes depending on pan size.

Assembling the French Kiss

Warm Nutella if desired: place 1 tablespoon Nutella in a small microwave-safe bowl and microwave in 5–10 second pulses, stirring between, just until spreadable (do not overheat).

Choose fillings: for banana option, slice half a banana into thin rounds. For strawberries option, hull and slice three strawberries. You may use one fruit or both as desired.

Fill crepe: lay one warm crepe flat on a plate. Spread the warmed Nutella evenly over the center third of the crepe (about 1 tablespoon). Arrange sliced banana and/or strawberries over the Nutella in a single layer so they don't weigh the crepe down.

Fold and finish: fold the crepe into a triangle or roll it up, whichever you prefer. Dust the top lightly with the powdered sugar (about 1 tablespoon) using a small sieve or shaker. Serve immediately while warm.
