Prepare meat (if raw)
If your chosen meat is raw (sausage patty or raw ham steak), cook it first in a skillet over medium heat until fully cooked through (internal temperature 160°F for pork sausage). For bacon, cook in skillet until crisp to your preference. Remove meat and keep warm on a plate tented with foil.
Toast bread or English muffin
While meat rests, split the English muffin or prepare two slices of sourdough/wheat. Lightly butter one side of each slice with 1/2 tbs butter. Toast in a skillet over medium heat or in a toaster until golden and lightly crisp, about 2–3 minutes per side in a skillet or 2–3 minutes in a toaster. Set aside.
Fry the eggs
Heat 1 tsp vegetable oil and remaining 1/2 tbs butter in a nonstick skillet over medium-low heat until butter foams. Crack two eggs into the skillet, spacing them apart. Season with 1 tsp salt (split) and 1/2 tsp black pepper. For sunny-side-up, cover skillet with lid and cook 2–3 minutes until whites are set and yolks still soft. For over-easy, cook 2 minutes, carefully flip and cook 20–30 seconds more. Remove eggs to a plate.
Assemble sandwich
Place the bottom slice of toasted bread or bottom half of English muffin on a plate. Lay the cooked meat on bread, top with the cheese slice so it begins to melt from the residual heat, then place the fried eggs on top. Cover with the top slice or muffin half. Press gently, slice in half if desired, and serve immediately.
Grits (or Potatoes)
Make quick grits
If choosing grits: bring 1 cup water and 1/2 cup milk to a simmer in a small saucepan. Stir in 1/2 cup quick grits and 1/4 tsp salt. Reduce heat to low and cook, stirring frequently, for 3–5 minutes until thickened. Stir in 1 tbs butter until melted. Taste and adjust salt. Keep warm until serving.
Make breakfast potatoes
If choosing potatoes: heat 1 tbs olive oil in a skillet over medium-high. Add 1 cup diced potatoes and cook undisturbed 3–4 minutes to brown, then add 1/4 cup chopped onion and continue to cook, stirring occasionally, until potatoes are tender and browned, about 8–10 minutes total. Season with 1/2 tsp salt and 1/4 tsp black pepper. Reduce heat to low and keep warm until serving.
