    Prep beans and garlic

    Drain and rinse the cannellini beans thoroughly. Peel the garlic and remove the core if using an especially large clove to reduce harshness.

    Blend hummus

    In a food processor, combine the drained beans, tahini, lemon juice, garlic clove, 3 tablespoons olive oil, cold water, salt, and black pepper. Process until smooth, scraping down the sides once or twice. If the mixture seems too thick or grainy, add additional cold water 1 teaspoon at a time until you reach a silky, spreadable consistency (about 1–3 more tablespoons).

    Adjust seasoning

    Taste and adjust: add more salt, lemon, or olive oil as needed. Transfer the hummus to a shallow serving bowl and use the back of a spoon to create a slight well in the center for the 'nduja and oil.

'Nduja Topping

    Warm 'nduja

    Place a small skillet over low-medium heat. Add 1 tablespoon olive oil and the 'nduja. Cook gently, breaking it up with a spoon, until it softens and releases oil and aromatic fat (about 3–5 minutes). If you like extra heat, stir in the red pepper flakes for the last minute.

    Spoon over hummus

    Spoon the warm, oil-laden 'nduja into the well you made in the hummus so some of the flavored oil runs over the surface. This also warms the hummus and intensifies the flavors.

Toasted Pine Nuts & Finish

    Toast pine nuts

    In a small dry skillet over medium heat, toast the pine nuts, stirring constantly, until fragrant and lightly golden (2–3 minutes). Remove immediately to a plate to stop cooking and prevent burning.

    Finish and garnish

    Scatter the toasted pine nuts over the hummus and 'nduja. Sprinkle the chopped parsley, lemon zest, and flaky salt over the top. If desired, dust with a pinch of smoked paprika for color. Drizzle a little additional olive oil over everything.

    Serve

    Serve the hummus warm or at room temperature with warm pita, crusty bread, or raw vegetables for dipping. Encourage diners to scoop up a bit of hummus, a smear of 'nduja and some pine nuts in each bite.
