    Prepare romaine

    Trim the base of each romaine head, remove any wilted outer leaves, then slice each head in half lengthwise or into 2-inch wide ribbons depending on presentation. Place prepared romaine in a large mixing bowl and chill briefly while you assemble the other components.

    Prepare vegetables

    Halve the cherry tomatoes, slice the cucumber into 1/4-inch rounds, thinly slice radishes and red onion. Add all to the bowl with romaine and gently toss to combine.

Green Goddess Dressing

    Blend the dressing

    In a blender or food processor, combine mayonnaise, Greek yogurt, parsley, chives, tarragon, lemon juice, anchovy fillets (if using), garlic clove, olive oil, salt, and black pepper. Pulse until smooth and bright green. Taste and adjust acid (more lemon) or salt as needed.

    Adjust consistency

    If the dressing is too thick, add buttermilk or water 1 tablespoon at a time (up to 2 tbs) until it reaches a pourable but creamy consistency. Transfer dressing to a bowl and refrigerate until ready to use (can be made up to 24 hours ahead).

    Make breadcrumbs

    Preheat a skillet over medium heat. Add butter and olive oil. When butter is melted and foamy, add the cubed bread. Toast, stirring frequently, until cubes are crisp and golden brown, about 6–8 minutes. Sprinkle garlic powder and salt over the bread during the last 2 minutes. Remove from heat and stir in chopped parsley and optional Parmesan. Transfer to a bowl and let cool; they will continue to crisp.

    Dress the salad

    Drizzle 3 to 4 tablespoons of Green Goddess dressing over the romaine and vegetables in the large bowl. Toss gently but thoroughly so leaves are evenly coated. Start with less dressing and add more to taste.

    Divide the dressed salad among 4 plates or serve family-style. Scatter the warm (or cooled) breadcrumbs over each portion to provide crunch. Drizzle a little extra-virgin olive oil, sprinkle flaky sea salt to taste, and serve with lemon wedges on the side for brightening.

    Serve immediately so breadcrumbs stay crisp. The salad is a substantial lunch on its own; add grilled chicken or chilled shrimp for protein if desired.
