    Prepare produce

    Wash carrots and apples thoroughly under cold running water. Peel the ginger and trim carrot ends. Core the apples and cut them into quarters to fit your juicer/blender. If using an organic apple and a high-power blender, you may leave the skin on; otherwise remove the skin.

    Juicing (for a juicer)

    Feed the carrots, apple quarters, and ginger through the juicer, alternating produce so the blades stay balanced. Collect the juice in a pitcher. Add the lemon juice, a pinch of sea salt, and stir to combine. Pour over ice and add cold water to adjust intensity if desired. Garnish with mint leaves if using. Serve chilled.

    Blending (for a blender)

    Place carrot pieces, apple quarters, peeled ginger, and 1 cup cold water into the blender. Blend on high until completely smooth (30–60 seconds). Pour the mixture through a fine-mesh sieve, nut milk bag, or chinois into a bowl or pitcher, using the back of a spoon to press out as much liquid as possible. Discard or reserve the pulp for another use (baked goods, smoothies, or compost). Stir in lemon juice and a pinch of sea salt. Taste and add more water if too intense. Serve over ice and garnish with mint if desired.

    Adjust and serve

    Taste the juice and adjust brightness with additional lemon juice (½ tsp increments) or sweetness by adding another small apple if desired. Serve immediately for best flavor and nutrient retention. Store any leftovers in an airtight glass container in the refrigerator for up to 24 hours; shake gently before serving.
