Citrus-Marinated Chicken

Prepare the marinade
In a medium bowl, combine 1 cup fresh orange juice, 1 tablespoon fresh lemon juice, 1 tablespoon fresh lime juice, 3 tablespoons olive oil, 2 tablespoons soy sauce, and 1 tablespoon honey. Zest one orange directly into the bowl. Peel and finely mince 3 garlic cloves and grate 1 teaspoon fresh ginger; add to the bowl. Stir in 1 teaspoon smoked paprika, 1 teaspoon ground cumin, 1 teaspoon kosher salt, and 1 teaspoon freshly ground black pepper until honey and salt dissolve.

Marinate the chicken
Place 1 pound boneless skinless chicken thighs in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, pressing out excess air if using a bag and seal. Massage the chicken gently so the marinade coats each piece. Refrigerate at least 1 hour and up to 6 hours (avoid longer than 8 hours to prevent acid-curing the meat).

Bring to temperature
About 20–30 minutes before grilling, remove chicken from refrigerator and let sit at room temperature, still in its marinade, to take the chill off. Meanwhile preheat the grill to medium-high (about 425–450°F / 220–230°C).

Grill the chicken
Place chicken thighs on the hot grill. Grill 4–6 minutes per side, or until an instant-read thermometer inserted into the thickest part reads 165°F (74°C). Flip only once or twice to develop good char without overcooking. If using a gas or charcoal grill, move pieces to a cooler zone if flare-ups occur.

Rest and garnish
Transfer grilled chicken to a cutting board and tent loosely with foil. Let rest 5 minutes to redistribute juices. Slice or leave whole. Sprinkle with chopped fresh cilantro (optional) and a little additional orange zest if desired. Serve with lemon wedges.

Roast the chiles and aromatics
Preheat the broiler or a hot dry skillet. Place 6 red chiles and 2 hotter chiles on a sheet pan under the broiler or in the skillet and blister, turning with tongs until blackened and softened in spots (5–8 minutes). Add 1 small chopped shallot and 2 garlic cloves to the pan for the last 1–2 minutes to soften and char lightly. Remove and let cool briefly.

Seed and chop (optional)
If you want a milder sauce, split the cooled chiles and scrape out seeds with a spoon. Roughly chop the roasted chiles, shallot and garlic.

Blend the sauce
In a blender or food processor combine the roasted chiles, shallot, and garlic with 1 tablespoon fresh orange juice, 3 tablespoons apple cider vinegar, 1 teaspoon white vinegar, 1 teaspoon light brown sugar, and 1 teaspoon kosher salt. Add 1 tablespoon neutral oil. Blend on high until smooth, about 30–60 seconds. If the mixture is too thick, add 1–2 tablespoons water and blend to reach a pourable sauce consistency.

Finish for silkiness
Optional: For a richer mouthfeel, warm 1 teaspoon unsalted butter until melted and drizzle into the blender while running on low to emulsify. Taste and adjust acid, salt, or sweetness: add more vinegar for tang, a pinch more sugar for balance, or another small chile for heat.

Cook to meld flavors (optional)
For a slightly cooked, mellower sauce, transfer the blended sauce to a small saucepan and simmer gently for 3–4 minutes, stirring, then cool. This also makes the sauce safe if you reserved raw chicken marinade earlier and cooked it down to use as a basting sauce.

Store
Transfer sauce to a sterilized jar and refrigerate. It will keep 1–2 weeks refrigerated; flavors deepen after a day.

If you reserved marinade and boiled it to use as a glaze: bring reserved marinade to a boil in a small saucepan and simmer 3–4 minutes until slightly reduced and safe. Brush lightly over chicken during the last minute on the grill or after resting.
