Method
Garnish & Syrup
- 1
Make salted lime syrup
In a small saucepan over low heat, combine 2 tablespoons granulated sugar and 2 tablespoons water. Stir until the sugar dissolves and the mixture comes just to a simmer, about 2–3 minutes. Remove from heat, stir in 1 teaspoon fresh lime zest and 1/2 teaspoon of the fine sea salt (reserve the other 1/2 tsp for rim). Let the syrup cool to room temperature, then strain into a small jar to remove zest. Refrigerate if not using immediately. Yield: about 3 tablespoons.
- 2
Prepare glass rim
Pour the remaining 1/2 teaspoon fine sea salt onto a small plate. Rub the rim of a large wine glass or rocks glass with a lime wedge to moisten, then dip the rim into the salt to coat lightly. Set glass aside.
Cocktail
- 3
Fill the prepared glass with large ice cubes (about 1 cup).
- 4
Add 1/2 ounce fresh lime juice and 1/2 tablespoon of the salted lime syrup into the glass over the ice. These provide the salty-lime backbone; adjust to taste if you prefer more or less salt/sour.
- 5
Pour 3 ounces Ghia (or a similar non-alcoholic bitter citrus aperitif) over the ice and syrup. Stir gently once to combine the flavors.
- 6
Top with 2 ounces chilled Prosecco and 1 ounce soda water. Stir very gently once to integrate, preserving the bubbles.
- 7
Garnish with a lime wheel on the rim or floated in the glass. Optionally express a small piece of lime peel over the drink for extra aroma before adding the wheel.
- 8
Serve immediately with a stirring straw. Taste and, if needed, add a tiny pinch of reserved salt to the top or an extra 1/4 teaspoon salted lime syrup for more salinity.
