Prepare bread

Bring bread slices to room temperature if chilled. Spread 1/2 tbs softened butter evenly on the outside face of each slice (the side that will be grilled). This creates a golden crust when toasting.

Assemble cheeses

On the inside (untoasted) face of one bread slice, layer the cheese in this order for even melt and flavor distribution: provolone (bottom), swiss (middle), cheddar (top). Ensure edges are aligned so heat will melt evenly.

Grill sandwich

Heat a nonstick skillet or griddle over medium-low to medium heat. Place the bread slice with cheeses, cheese side up, in the pan. Top with the second slice of bread, buttered side up. Cover the pan with a lid or a large metal bowl for 1–2 minutes to encourage even melting. After 2–3 minutes, check the bottom; when golden brown (about 3–4 minutes total), carefully flip the sandwich and grill the other side until golden and the cheeses are fully melted (another 2–3 minutes). Remove from pan and set on a cutting board to rest 1 minute before slicing. This helps avoid cheese run-out.

Prepare vegetables

While sandwich is grilling, rinse and dry the lettuce leaves. Slice the tomato into 3 even slices (about 1/4 in / 6 mm each). Cut the dill pickle into 3 thin slices if not pre-sliced. Separate 6 thin rings from the red onion. Pat vegetables dry with paper towel to avoid sogginess in the sandwich.

Make dressing

In a small bowl, combine 1 tablespoon mayonnaise and 1 teaspoon yellow mustard. Add 1/2 teaspoon black pepper and a pinch (about 1/8 tsp) of the salt; reserve the remaining salt to season the tomato. Stir until smooth. Taste and adjust—if you prefer tang, add an extra 1/4 tsp mustard.

Assemble sandwich with classic dress

Once the grilled triple-cheese sandwich is rested and still warm, flip it open. Spread the mayonnaise-mustard dressing evenly across the cheese-topped slice. Layer lettuce (1 cup, lightly folded), then tomato slices (arrange to cover), sprinkle remaining salt (about 1/2 tsp) across the tomato, add the 3 pickle slices, and top with 6 red onion rings. Close the sandwich and press gently. If desired, cut diagonally and serve immediately.
