Cook the sausage

Heat a 10–12 inch nonstick or cast-iron skillet over medium heat. Crumble the 12 oz of bulk sausage (or remove casings from links and break up) into the skillet. Cook, stirring and breaking up with a spatula, until browned and cooked through, about 6–8 minutes. If the sausage releases excess fat, tilt the pan and spoon off most of the fat, leaving about 1 teaspoon to coat the pan.

Prepare the eggs

While the sausage cooks, break 6 large eggs into a medium bowl, add 1 tablespoon whole milk, 1 teaspoon salt, and 1 teaspoon black pepper. Whisk until blended and slightly frothy. This will make the eggs tender.

Scramble the eggs with butter

When the sausage is done, transfer it to a bowl and keep warm. Reduce heat to low–medium and add 2 tablespoons unsalted butter to the same skillet. Once the butter is melted and foaming, pour in the beaten eggs. Let eggs sit undisturbed for 15–20 seconds, then gently push cooked edges to the center with a silicone spatula, tilting the pan occasionally, cooking until just-set but still moist, about 2–3 minutes. Remove skillet from heat while eggs are slightly softer than you want (they’ll finish cooking).

Combine eggs, sausage, and cheese

Return the cooked sausage to the skillet with the eggs, stir to combine, and evenly fold in 1 1/2 cups shredded sharp cheddar until melted and distributed. Taste and adjust seasoning if needed. Keep mixture warm while you warm tortillas.

Warm and toast tortillas

Warm a clean skillet or griddle over medium heat. Lightly butter one side of a tortilla with about 1/2 teaspoon (reserve remaining butter). Place the tortilla butter-side-down on the skillet and warm for 10–15 seconds, then flip and warm the other side 10–15 seconds until pliable and slightly golden. Repeat for remaining tortillas. (You can warm tortillas directly in a microwave covered with a damp paper towel for 20–30 seconds if short on time.)

Assemble burritos

Place a warmed tortilla on a work surface, buttered side down. Spoon about 1/6 of the sausage-egg-cheese mixture (roughly 1 cup) in a line across the lower third of the tortilla, leaving 1–2 inches clear at both edges. If using, add 1 teaspoon hot sauce or 1 tablespoon salsa and a sprinkle of chopped cilantro on top of the filling. Fold the sides of the tortilla in over the filling, then fold the bottom up over the filling and roll tightly toward the top to form a burrito. Repeat for remaining tortillas and filling.

Optional finishing

If you prefer a pressed/crisp exterior, heat the skillet over medium-low, add remaining 1/2 tablespoon butter and place assembled burritos seam-side-down in the pan. Press gently and cook 1.5–2 minutes per side until golden and sealed. Transfer to a plate, cut in half if desired, and serve immediately with extra hot sauce or salsa.
