Crawfish Cream Sauce

Prepare aromatics and roux

Warm a medium saucepan over medium heat and add 2 tablespoons unsalted butter. When melted, add the minced shallot and cook until softened, about 2 minutes. Add the minced garlic and cook another 30 seconds until fragrant. Sprinkle 1 tablespoon flour over the aromatics and stir to form a light roux; cook 1 minute, stirring constantly to remove raw flour taste.

Add liquid and season

Slowly whisk in 1 cup half-and-half until smooth. Bring to a gentle simmer, stirring, until the sauce thickens slightly, 3–4 minutes. Stir in 1 teaspoon Creole seasoning, 1 teaspoon smoked paprika, 1 teaspoon Worcestershire sauce, and 1 teaspoon lemon juice. Taste and adjust with 1/2 teaspoon salt and 1/4 teaspoon black pepper.

Finish with crawfish

Fold in the 12 oz cooked crawfish tails and warm through 2–3 minutes over low heat so they stay tender but are heated. Stir in 1 tablespoon chopped parsley. Keep the sauce warm on the lowest heat while you prepare patties and onions; if it thickens too much, thin with 1–2 tablespoons milk or water.

Form beef portions

Divide the 16 oz ground beef into four even 4 oz balls (the menu calls for a dual smash: you'll make two thin patties per sandwich — 4 patties total). Handle gently; do not overwork the meat. Lightly season the tops with the combined 0.5 tsp salt, 0.25 tsp black pepper, and 1/2 tsp Worcestershire.

Preheat griddle or skillet

Heat a heavy skillet or griddle over medium-high until very hot. Add 2 teaspoons vegetable oil and spread. A cast-iron griddle works best to get good crust.

Smash and sear

Place two meat balls (for two patties) on the hot surface leaving room for others. Immediately press each ball flat with a sturdy metal spatula or a weighted press to about 1/4-inch thickness; hold pressure for 10–15 seconds to set the crust. Cook without moving until edges brown and juices bubble through, about 2 minutes.

Flip and cheese

Flip patties and immediately top each with two slices of Colby cheese (one slice per patty is standard; for extra cheesiness combine slices so each sandwich gets two melted slices). Cook another 30–60 seconds until cheese melts and patties finish (medium). Remove to a warm plate and cover loosely while you toast rolls and assemble.

Caramelize onions

While patties cook (or in a separate skillet), thinly slice the yellow onion. In a medium skillet over medium-low heat, melt 2 tablespoons butter. Add the sliced onions, 1/4 teaspoon salt, and cook slowly, stirring every few minutes until deeply golden and softened, about 12–15 minutes. If onions start to burn, lower heat and add a teaspoon of water.

Toast Kaiser rolls

Halve the 4 Kaiser rolls and butter cut sides lightly (use some of the reserved butter). Place cut-side down on the hot griddle or in a skillet until golden and crisp, about 1 minute. Keep warm.

Assembly

Build each Bayou Classic sandwich

Spread about 1 teaspoon Dijon mustard (optional) on the bottom half of each toasted roll. Place two smash patties (stacked) on the bottom roll. Spoon 3–4 tablespoons of the warm crawfish cream sauce generously over the patties. Top with a mound of caramelized onions. Add pickles and chopped green onion if using. Close with the top roll.

Serve

Serve immediately while patties are hot and sauce is saucy. Recommended accompaniment: fries or a simple slaw. Leftover sauce can be refrigerated for up to 3 days.
