Preheat the Oven

Preheat your oven to 425°F (220°C). This ensures that the oven is hot enough to create the molten center of the lava cake.

Prepare the Ramekins

Grease four ramekins with 1 tablespoon of unsalted butter and dust each with 1 tablespoon of cocoa powder to prevent sticking.

Making the Cake Batter

Melt Chocolate and Butter

In a microwave-safe bowl, combine 100g of dark chocolate and 100g of unsalted butter. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

Combine Dry Ingredients

In a separate bowl, whisk together 150g of powdered sugar, 50g of all-purpose flour, and a pinch of salt until well combined.

Mix the Batter

Once the chocolate and butter mixture is melted and slightly cooled, add in 2 whole eggs and 1 teaspoon of vanilla extract. Mix well until smooth. Gradually fold in the dry ingredients until just combined.

Baking the Lava Cakes

Fill the Ramekins

Evenly distribute the batter into the prepared ramekins, filling each about 2/3 full.

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

Remove from the oven and let cool for 1 minute. Carefully invert each ramekin onto a plate and gently lift off. Serve immediately, optionally with ice cream or whipped cream.
