Prepare the glass

Chill a coupe or rocks glass in the freezer for 5–10 minutes. On a small plate combine a pinch of salt and a few dried chili flakes; rub a lime wedge around the glass rim and dip lightly into the chili-salt to coat about half the rim.

Make mango purée (if not using prepared)

Peel and dice 1 small ripe mango. Purée in a blender until very smooth; strain through a fine sieve if needed for a silkier texture. Measure 1.5 oz purée for the cocktail.

In a cocktail shaker add reposado tequila (2 oz), mezcal (0.5 oz), fresh mango purée (1.5 oz), lime juice (0.75 oz), agave syrup (0.5 oz), and chili liqueur or tincture (0.25 oz). Fill the shaker with ice (about 6 oz / enough to fill).

Dry shake is optional to further integrate mango: first shake without ice vigorously for 8–10 seconds, then add ice and shake hard for 12–15 seconds until the outside of the shaker is very cold.

Double strain the mixture into the chilled glass (use a Hawthorne and a fine mesh strainer) to remove pulp and small ice chips, leaving a smooth mango body.

Coconut Foam (Aerial)

Combine foam ingredients

In a tall mixing container combine full-fat coconut milk (3 oz), aquafaba or egg white (0.75 oz), powdered sugar (0.5 tsp), lime zest (0.25 tsp), and soy lecithin (0.25 tsp) if using. Ensure coconut milk is well shaken so the solids and liquid are emulsified.

Aerate to foam

Using an immersion blender, blend the mixture at the surface until a stable, airy foam forms (about 20–30 seconds). If you don't have an immersion blender, dry shake the mixture vigorously in a cocktail shaker without ice for 45–60 seconds, then strain. For maximum stability refrigerate the foam briefly (2–3 minutes) before using.

Spoon or gently pour a 1/2–3/4 oz layer of coconut foam over the top of the strained cocktail so it sits as a distinct cloud above the mango base.

Garnish & Finish (Crispy + Heat)

Lightly toast coconut flakes in a dry skillet over medium heat for 1–2 minutes until golden and fragrant; watch carefully to avoid burning. Remove and cool.

Sprinkle a pinch (about 1/4 tsp) of dried chili flakes across the foam surface for heat and color. Add the toasted coconut flakes (about 1 tsp) on one side of the foam to create a crunchy textural contrast.

Skewer the thin mango slice and, if using, a small piece of candied chili or chili-salt crisp and rest it across the rim or lay it gently on the foam so it reads as a 'crisp' garnish.

Optional aroma: lightly torch the candied chili (<1 second) or hold a smoking rosemary sprig briefly above the drink to impart a fleeting savory smoke note that complements the mezcal.

Serve immediately while the foam is airy and the toast remains crisp. Encourage guests to sip through the foam so they experience coconut, mango, heat and smoke layered with the tequila-mezcal base.
