Prepare the Home Fries

Dice the potatoes and boil them in salted water until tender, about 10 minutes. Drain and set aside.

Cook the Chorizo

In a large skillet, heat 1 tablespoon of oil over medium heat. Add the chorizo and cook until browned and cooked through, about 5-7 minutes. Remove from the pan and set aside.

Sauté the Vegetables

In the same skillet, add another tablespoon of oil. Sauté the diced onion, green bell pepper, jalapeño, and tomato until soft, about 5 minutes.

Scramble the Eggs

In a bowl, whisk the eggs with salt and black pepper. Pour the eggs into the skillet with the sautéed vegetables and cook, stirring gently until scrambled and just set, about 3-4 minutes.

Combine and Serve

Add the cooked chorizo and home fries to the skillet, mixing everything together. Top with shredded cheddar cheese and crispy tortilla strips before serving.
