Prepare Chocolate Base

    Chop chocolate and measure ingredients

    Finely chop the bittersweet chocolate and place it in a heatproof bowl. Measure the cream, butter, corn syrup, salt, vanilla, and truffle oil so everything is ready (mise en place).

    Heat cream mixture

    In a small saucepan, combine the heavy cream, corn syrup, and salt. Heat over medium until it just begins to simmer—small bubbles will form around the edges. Do not let it reach a rolling boil.

    Bloom chocolate

    Pour the hot cream evenly over the chopped chocolate. Let sit undisturbed for 1 minute to soften the chocolate, then gently stir with a spatula from the center outward until the mixture becomes smooth and glossy.

    Emulsify and finish

    Once smooth, add the cubed butter and stir until fully melted and incorporated. Stir in the vanilla extract and truffle oil (or freshly grated truffle). Taste and adjust salt if needed. The resulting ganache should be thin and pourable at warm temperature—this is your 'liquid truffle.'

    Adjust texture

    If the ganache is too thin, let it cool at room temperature for 10–15 minutes, stirring occasionally until it thickens to a syrupy consistency. If it becomes too thick, gently rewarm in a double boiler or microwave in 5–7 second bursts, stirring between each burst, until pourable.

    Prepare serving vessels

    Lightly dust the inside of your shot glasses or porcelain tasting spoons with dark cocoa powder (tap out excess). This adds aroma and prevents the liquid truffle from sticking visually.

    Portion

    Spoon or pour about 1 to 1.5 tablespoons (15–22 ml) of liquid truffle into each serving spoon or shot glass. For 8 oz chocolate and 1 cup cream you should get about 6 generous portions.

    Garnish and finish

    Dust a tiny pinch of confectioners' sugar over each serving if desired, or shave a few flakes of fresh truffle on top for an intense aroma. Serve warm (slightly warmed is ideal) so the center is silky and 'liquid' when tasted.

    Store any leftover liquid truffle in a covered container in the refrigerator for up to 7 days. Rewarm gently in a double boiler or microwave in short bursts, stirring until smooth before serving.
