Prepare Glass & Syrup

Chill and measure
Place the serving glass in the freezer for 5β10 minutes or use a chilled glass. Measure 2 tablespoons of your chosen flavored syrup into the bottom of the glass. If you prefer sweeter soda, add 1 teaspoon simple syrup and stir to combine.

Add ice
Fill the glass about three-quarters full with ice (approximately 1 cup). The ice keeps the drink cold and helps maintain carbonation.
Build the Soda

Add carbonation
Slowly pour 8 fl oz (about 240 ml) of very cold club soda or sparkling water over the ice and syrup. Pour gently down the side of the glass or over the back of a spoon to preserve carbonation and avoid excessive foaming.

Incorporate cream (optional)
If making a creamy Italian soda, pour 2 tablespoons of half-and-half or heavy cream over the top. Stir gently with a long spoon 2β3 times to combine the cream and syrup with the soda without losing too much fizz.

Taste the soda and adjust sweetness: add up to another teaspoon of simple syrup if needed and stir gently. Garnish with a lemon or lime wedge on the rim and a mint sprig or maraschino cherry on top if desired. Serve immediately with a straw.
