Roasted Hazelnuts

Preheat and roast
Preheat the oven to 350°F (175°C). Spread the 2 cups of whole hazelnuts in a single layer on a rimmed baking sheet lined with 1 parchment paper sheet. Roast for 10–12 minutes, stirring once or twice, until the skins are blistered and nuts are fragrant and lightly browned.

Remove the hazelnuts from the oven and let them cool for 2–3 minutes until they are cool enough to handle but still warm.

Rub the warm hazelnuts in a clean kitchen towel to remove most of the loose skins. It’s okay if some skins remain — they add flavor. Transfer the nuts to a bowl and toss with 1 teaspoon fine sea salt. Set aside on the parchment-lined sheet to dry while you prepare the syrup.

Prepare tools
Line a baking sheet with parchment paper (use one of the reserved sheets). Have a heatproof spatula or wooden spoon, a heavy-bottomed medium saucepan, and a candy thermometer (optional) ready.

Make a wet sugar stage
Combine 1 cup granulated sugar, 1 tablespoon water, and 1 tablespoon light corn syrup in the saucepan. Stir gently to moisten the sugar, then set the pan over medium heat. Allow the sugar to dissolve and come to a boil without stirring; if needed, gently swirl the pan. Clip in a candy thermometer if you have one.

Continue cooking the syrup until it reaches a light amber color (about 300–310°F / 149–154°C for hard crack). If you don't use a thermometer, watch for a golden-amber hue and aroma of caramel. This will take approximately 8–12 minutes depending on your stovetop.

Finish the caramel
When syrup reaches the target color/temperature, remove from heat immediately. Stir in 1 teaspoon unsalted butter and 1/2 teaspoon vanilla extract carefully (it may sputter). If making chocolate dragees, whisk in 1 teaspoon cocoa powder quickly until smooth and combined — this will tint the coating brown.

Let the syrup cool very briefly (30–45 seconds) until it thickens slightly but is still pourable. You want it viscous enough to coat the nuts rather than run off completely.

Coat the hazelnuts
Working quickly, add the roasted hazelnuts to the saucepan and fold them into the caramel with the spatula until well coated. Use care — the caramel is extremely hot. If the caramel begins to seize or harden too quickly, return briefly to very low heat to soften, then continue.

Using a fork or slotted spoon, transfer the coated nuts onto the prepared parchment in a single layer, separating any clusters with the spatula so they don't stick together. If you want a thicker dragee shell, wait 30–60 seconds for the first coating to set, then return the loose nuts to the remaining warm syrup and repeat the coating step once more for a second layer. Spread them out again to cool.

Once the coated hazelnuts have cooled to room temperature and the coating is set (about 15–20 minutes), you can dust them lightly with 2 tablespoons cocoa powder or powdered sugar for a matte finish. For a glossy finish, lightly brush each nut with a very small amount (about 1/2 teaspoon total) of neutral oil applied to a clean fingertip or pastry brush.

Allow any dusting to set for a few minutes, then transfer the dragees to an airtight container. Store at cool room temperature up to 2 weeks. If humidity is high, keep them in a cool, dry place; refrigeration can introduce moisture and cause the coating to soften.
