    Heat water

    Measure 12 fl oz (about 355 ml) of fresh cold water and bring it to a boil in a kettle. Once boiling, remove from heat and let sit 30 seconds to reach about 200°F (93°C).

    Prepare coffee

    While the water heats, measure 2 tablespoons of freshly ground coffee (medium grind). If using a filter method, place a paper filter in the dripper and rinse it with hot water to remove paper taste; discard rinse water.

    Bloom (for pour-over or French press)

    Place the ground coffee in the brewer. Pour just enough hot water (about 40–60 ml) to saturate the grounds and let it bloom for 30–45 seconds to release gases.

    Brew

    Slowly pour the remaining hot water over the grounds in a circular motion for pour-over, or pour all water into the French press and let steep for 4 minutes. If using a drip coffee maker, start the machine and let it complete the brew cycle.

    Press or pour

    If using a French press, after 4 minutes, gently press the plunger down. If using a pour-over, allow all water to pass through the grounds into the carafe. If using a drip machine, transfer coffee to a mug.

    Finish and serve

    Pour brewed coffee into your mug. Add 2 fl oz of milk if desired and stir. Sweeten with 1 teaspoon of sugar, syrup, or honey to taste. Optionally add a pinch (0.25 tsp) of salt to reduce bitterness. Stir well and serve immediately.
