Prepare and Toast
Preheat oven to 375°F (190°C). Lightly butter both sides of each brioche slice with the softened butter using a pastry brush or knife. Mix 1 tsp ground cinnamon with 2 tbs granulated sugar; sprinkle evenly over the buttered tops. Arrange slices in a single layer on a parchment-lined baking sheet. Bake 8–10 minutes until edges are golden and the sugar on top has mostly dissolved and caramelized slightly. Remove and cool on a rack for 5 minutes.

Make Frosting
While the toasts cool, beat the room-temperature cream cheese and 4 tbs room-temperature butter in a bowl with an electric mixer on medium speed until smooth, about 1–2 minutes. Add 1 cup confectioners' sugar gradually, scraping down the bowl, then add 1 tsp vanilla, 1 tsp lemon juice, and a pinch of salt. Beat on low-high briefly until creamy and spreadable, about 30–45 seconds. Taste and adjust sweetness or lemon if desired. Transfer frosting to a piping bag or bowl.

Frost the Toasts
When toasts are warm but not hot, spread or pipe roughly 2–3 tablespoons of cream cheese frosting onto each slice, covering the surface but leaving a small border. Chill the frosted slices in the refrigerator for 10–15 minutes to firm the frosting; this helps achieve a clean brûlée layer.

Prepare Crust Mixture
In a small bowl combine 1 cup packed dark brown sugar, 1 tbs ground cinnamon, and optional 1 tsp finely grated orange zest. Break up any clumps so the mixture is loose and sand-like. This will be used under the brûlée sugar to build depth of flavor.

After chilling, gently press about 1 teaspoon of the cinnamon-brown-sugar mixture onto the center of each cream cheese frosted toast—this anchors the top sugar and gives cinnamon flavor.

Top with Granulated Sugar
Evenly sprinkle about 1 to 1.5 tablespoons of granulated sugar over the top of each prepared slice, covering the cream cheese and cinnamon-brown-sugar anchor. Tilt and tap the toast to level the sugar so it forms an even layer for caramelizing.

Caramelize the Sugar
Using a kitchen torch held about 2–3 inches from the surface, move the flame in a slow circular motion to melt and caramelize the sugar until it turns deep amber and glassy, 20–45 seconds per slice. If you don't have a torch, place the slices under a very hot broiler on the top rack for 1–2 minutes, watching closely to avoid burning; rotate as needed. Let the brûlée harden for 1–2 minutes.

Optional Garnish
If using, scatter 1 teaspoon toasted chopped pecans or walnuts at the edge of each slice (pressed lightly into the still-warm caramel) and dust very lightly with 1 tsp ground cinnamon for aroma.

Serve immediately at once for maximum contrast between crisp caramel and creamy frosting, or let sit at room temperature up to 15 minutes. Cut each slice in half if desired and serve.
