Simple Syrup Base

Combine and dissolve
In a small saucepan, combine 1 cup granulated sugar and 1 cup water. Stir briefly to even out the sugar, then place over medium heat.

Bring the mixture to a gentle simmer, stirring occasionally until the sugar is fully dissolved and the liquid is clear, about 3–5 minutes. Do not let it boil vigorously.

Cover the pan or transfer the syrup and solids to a heatproof jar and let steep until the desired intensity is reached: 10–15 minutes for delicate flavors (vanilla, mint), 20–30 minutes for stronger flavors (ginger, cinnamon, lemon zest).

Taste periodically. Remember the flavor will mellow slightly as the syrup cools.

If you used whole spices, ginger, or citrus zest, strain the syrup through a fine-mesh sieve or cheesecloth into a clean container to remove solids.
Finish and Store

If desired for longer shelf life, add 1 tsp vodka per cup of syrup and stir to combine (optional).

Let the syrup cool to room temperature, then transfer to a sanitized bottle or jar with a tight-fitting lid.

Refrigerate. Simple syrup will keep about 1 month in the refrigerator without alcohol, or up to 3 months with the optional vodka preservative. Discard if cloudy or off-smelling.
