Prepare the Grits

In a medium saucepan, bring 4 cups of water to a boil. Stir in the grits and salt, then reduce heat to low. Cook for about 20-25 minutes, stirring occasionally, until the grits are thick and creamy. Once cooked, stir in the grated Gouda cheese and set aside.

Sauté the Shrimp

In a large skillet, melt 2 tablespoons of butter over medium heat. Add the shallots and garlic, sauté for 2-3 minutes until softened. Add the cherry tomatoes and cook for another 2 minutes.

Add the Shrimp

Increase the heat to medium-high, then add the Gulf shrimp to the skillet. Season with salt and black pepper. Sauté for 3-4 minutes until the shrimp are pink and cooked through.

Deglaze and Finish

Pour in the white wine and allow it to reduce for about 2 minutes. Stir in the remaining butter, parsley, and thyme. Mix well and remove from heat.

Serve

To serve, spoon the creamy Gouda grits onto plates and top with the sautéed shrimp and sauce. Enjoy!
