Prepare the Garlic Butter

In a small saucepan, melt the butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Remove from heat and stir in lemon juice, chopped parsley, and black pepper. Set aside.

Cook the Bacon

In a skillet, cook the smoked bacon over medium heat until crispy. Remove from skillet, let it cool, and crumble into small pieces.

Prepare the Oysters

Preheat your grill to medium-high heat. Carefully shuck the oysters, keeping them on the half shell. Place the oysters on a grill-safe pan or directly on the grill grates.

Grilling

Grill the Oysters

Spoon a small amount of garlic butter into each oyster. Top with crumbled bacon and a generous amount of Monterey Jack cheese. Grill the oysters for about 5-7 minutes, or until the cheese is melted and bubbly.

Serve

Remove the oysters from the grill and let them cool slightly before serving. Garnish with additional parsley if desired and enjoy!
