Prepare the Potatoes

Peel and dice the potatoes into small cubes. In a skillet, heat olive oil over medium heat, add the potatoes, and season with salt and pepper. Cook until golden and crispy, about 10-15 minutes, stirring occasionally.

Cook the Bacon or Sausage

In another skillet, cook the bacon or sausage over medium heat until crispy and fully cooked. Remove from heat and set aside.

Scramble the Eggs

In a bowl, whisk the eggs with salt and pepper. Pour the eggs into the skillet (you can use the same one as the meat) and scramble until just set.

Assemble the Quesadilla

On one half of a tortilla, layer the scrambled eggs, cooked bacon or sausage, and cheese. Fold the tortilla in half to cover the filling.

Cook the Quesadilla

In a clean skillet, place the quesadilla and cook over medium heat for about 3-4 minutes on each side or until the tortilla is golden brown and the cheese is melted.

Serve

Cut the quesadilla into wedges and serve with crispy potatoes, salsa, and sour cream on the side.
