Casserole Preparation
Preheat the Oven
Preheat your oven to 375°F (190°C).
Cook the Chorizo
In a skillet over medium heat, cook the chorizo until browned. Drain excess fat and set aside.
Mix the Base
In a large bowl, mix together the cream cheese, pesto, eggs, and milk until smooth.
Add Vegetables and Seasoning
Stir in the chopped bell pepper, chopped onion, salt, and black pepper into the mixture.
Combine Everything
Fold in the cooked chorizo and half of the shredded Chihuahua cheese into the mixture.
Transfer to Baking Dish
Pour the mixture into a greased 9x13 inch baking dish and spread evenly.
Top with Cheese
Sprinkle the remaining Chihuahua cheese on top of the casserole.
Bake
Bake in the preheated oven for 30-35 minutes, or until the cheese is bubbly and golden.
Cool and Serve
Let the casserole cool for a few minutes before slicing and serving.
