Prep potatoes and pretzel crust

Peel and coarsely grate the russet potatoes using the large side of a box grater. Place grated potato in a clean kitchen towel, squeeze out as much moisture as possible, then transfer to a bowl. Finely pulse or crush the soft pretzel pieces in a food processor (or place in a sealed bag and crush with a rolling pin) until you have coarse crumbs roughly the size of panko. Combine the crushed pretzels with the grated, wrung-out potatoes, chopped parsley, smoked paprika, 1/2 tsp kosher salt, and 1/4 tsp black pepper. Mix to incorporate; this will form a moist crusting mixture.

Set up dredging station

Place the 3/4 cup flour in a shallow dish and season with a pinch of salt. In a second shallow dish, beat the 2 eggs with the 3 tbs milk until uniform. In a third plate, spread the potato–pretzel mixture so it's ready to press onto the fish.

Coat the walleye

Pat walleye fillets dry with paper towels and season both sides with the remaining 1/2 tsp kosher salt and 1/4 tsp black pepper. Lightly dust each fillet with flour, shaking off excess. Dip fillets into the egg wash, then press the flesh side firmly into the potato–pretzel mixture so it adheres in an even layer (approx. 1/8–1/4 inch thick). Set crusted fillets on a rack and let rest 5–10 minutes to help the crust adhere.

Cook the fillets

Heat a large skillet over medium heat and add 1/4 cup neutral oil. When oil shimmers (but not smoking), place fillets crust-side down. Cook 3–4 minutes without moving to form a golden crust. Carefully flip and reduce heat to medium-low; add 1/4 cup oil if pan needs more fat. Continue cooking 2–4 minutes more until fish is opaque and flakes easily (internal temperature ~135–140°F/57–60°C). Transfer to a baking sheet and, if needed, place in a 325°F (160°C) oven for 3–5 minutes to finish. Spoon 1 tbs unsalted butter over each fillet just before serving to add gloss and flavor.

Cook the bacon: In a medium skillet over medium heat, cook the 6 slices of bacon until crisp, about 6–8 minutes, turning as needed. Transfer bacon to a paper-towel-lined plate. Leave 1–2 tbs of bacon fat in the skillet (discard excess) and reserve the rest of the crumbled bacon for garnish; roughly chop or crumble and set aside.

Boil liquids and cook grits: In a medium saucepan, bring 3 cups water and 1 cup whole milk to a gentle boil with 1 tsp kosher salt. Slowly whisk in 1 cup stone-ground grits. Reduce heat to low and simmer, stirring frequently, until thickened and tender — 20–30 minutes depending on grits. If grits become too thick, stir in a splash of water or milk to adjust consistency.

Finish grits with cheese and bacon: Once grits are creamy and tender, remove from heat and stir in 2 tbs butter, 1 cup grated sharp cheddar, and the reserved crumbled bacon (reserve a small amount of bacon for garnish if desired). Stir until cheese is melted and grits are smooth. Adjust seasoning with 1/2 tsp black pepper and additional salt if needed. Keep warm while fish cooks, stirring occasionally. Sprinkle chopped chives on top just before plating.

Chili Pepper Beer Butter

Make the butter: In a small saucepan over low heat, combine 6 tbs room-temperature unsalted butter, 1/4 cup beer, 1 tbs fresh lime juice, 1 tsp minced chipotle in adobo (or finely minced fresh chili), and 1 tsp honey. Warm gently, whisking until butter melts and the mixture emulsifies and slightly reduces — about 3–4 minutes. Do not boil. Season with 1/2 tsp kosher salt and 1/4 tsp black pepper. Taste and adjust heat or sweetness to preference.

Finish and hold: Keep the chili pepper beer butter warm over the lowest heat or transfer to a small insulated container until ready to serve. Rewarm gently if it begins to separate; whisk to re-emulsify before using.

Plating & Garnish

Assemble: Spoon a generous portion of bacon cheddar grits onto each plate. Place one potato pretzel–crusted walleye fillet on top of the grits. Spoon 1–2 tablespoons of the chili pepper beer butter over the fillet, allowing it to drip onto the grits. Finish with a sprinkle of reserved bacon, microgreens or chopped parsley, and a lemon wedge on the side.

Serve: Serve immediately while the fish is hot and the butter is warm. Suggested accompaniment: a crisp green salad or steamed vegetables.
