Prep & Toast
Preheat oven to 450°F (230°C). If using store-bought focaccia, slice horizontally to create a pizza base or use whole and press slightly. Place focaccia on a parchment-lined baking sheet. Brush the cut surface lightly with 2 tbs olive oil. Toast in the preheated oven for 6–8 minutes until the top is lightly golden and the surface is slightly crisp. Remove and keep oven on for baking pizza later.
Roasted Tomatoes
While oven preheats, toss tomatoes with 1 tbs olive oil, minced garlic, 1 tsp kosher salt, 1 tsp black pepper, and 1 tsp dried oregano in a bowl. Spread on a small rimmed baking sheet or oven-safe dish and roast in the 450°F oven for 12–15 minutes until tomatoes blister and begin to collapse and caramelize. Remove from oven and set aside. Reserve any pan juices.
Caramelized Onions
Heat a large skillet over medium-low heat. Add 1 tbs butter and 1 tsp olive oil. Add the sliced onions and 1 tsp salt; cook gently, stirring occasionally, for 20–25 minutes until onions are deep golden and sweet. If onions stall before browning, add 1/2 tsp brown sugar and continue cooking. Remove from heat and keep warm.
Chicken
Pat the chicken dry. Rub with 1 tsp olive oil, 1/2 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp salt, and 1/4 tsp black pepper. Heat a small skillet or grill pan over medium-high heat. Cook the chicken 3–5 minutes per side (depending on thickness) until internal temperature reaches 165°F (74°C). Remove and let rest for 5 minutes, then thinly slice or shred into bite-sized pieces.
Cheese & Assembly
Lower oven to 425°F (220°C) if it's hotter from toasting. Place the toasted focaccia on the baking sheet. Evenly scatter half of the shredded pepper jack over the focaccia. Arrange roasted tomatoes (with any juices), caramelized onions, and sliced chicken across the surface. Sprinkle the remaining pepper jack on top.
Bake the assembled pizza in the 425°F oven for 8–10 minutes, or until cheese is fully melted and bubbling and the edges of the focaccia are crisp to your liking.
Finishing & Sauces
Remove pizza from oven. Drizzle ranch dressing evenly over the hot pizza (about 1/2 cup), then drizzle or dot hot sauce to taste (start with 1 tbs). Sprinkle chopped parsley or basil and optional red pepper flakes. Let rest 2 minutes, then slice and serve warm.
