Prepare vegetables

Rinse and spin the mixed salad greens dry. Place the greens in a large salad bowl. Rinse the cherry tomatoes and halve them. Thinly slice the red onion and separate into rings. Add the halved cherry tomatoes and sliced red onion to the bowl with the greens.

Add crunchy elements

Add the croutons to the bowl. If using, add the crumbled feta or vegan feta. Toss lightly just to combine; do not dress yet.

Pomegranate Vinaigrette

In a small bowl or jar, combine the pomegranate molasses, Dijon mustard, minced shallot, red wine vinegar, and honey or agave. Whisk until combined.

Slowly drizzle in the extra-virgin olive oil while whisking vigorously (or close the jar and shake) to emulsify the dressing. If the dressing is too thick or strong, whisk in up to 1 tablespoon of water to reach a balanced, pourable consistency.

Season the vinaigrette with 1/2 teaspoon salt and 1/4 teaspoon freshly ground black pepper. Taste and adjust: add a little more honey/agave for sweetness, vinegar for brightness, or salt for seasoning. Keep refrigerated until ready to use; give a quick shake or whisk before dressing the salad.

To Assemble and Serve

Just before serving, drizzle about 3 to 4 tablespoons of the pomegranate vinaigrette over the salad (adjust amount to taste). Gently toss the salad until the greens, tomatoes, onions, and croutons are evenly coated with dressing.

Plate the salad on individual plates or serve family-style. Sprinkle optional pomegranate arils and torn mint leaves on top for color and brightness. Taste and add additional salt or pepper if needed.

Serve immediately so croutons remain crisp.
