Prepare crab

Pick through the lump crab meat and remove any remaining shell fragments. Gently pat the crab dry with paper towels to remove excess moisture; place in a medium bowl.

Make cake mixture

In a separate bowl whisk together mayonnaise, Dijon mustard, beaten egg, Worcestershire sauce, lemon juice, chopped parsley, Old Bay, salt, and black pepper until smooth. Fold the dressing into the crab meat gently so the lumps mostly remain intact. Add 3/4 cup fresh breadcrumbs (from the 3 cups if using fresh) to the crab mixture to bind. Mix gently until just combined; the mixture should hold when formed into a patty but not be overly wet. Adjust with an additional tablespoon of breadcrumbs if too wet.

Form cakes

Divide the mixture into 8 equal portions for appetizer-size cakes (about 2 oz each). Shape gently into patties about 2.5 inches across and 3/4 inch thick. Chill on a tray lined with parchment in the refrigerator for 20–30 minutes to firm up (this helps them hold during cooking).

Dredge and coat

Set up three shallow dishes: flour, beaten egg (reserve small amount from earlier or use an extra beaten egg), and panko/breadcrumbs for coating. Lightly dredge each chilled patty in flour, tap off excess, dip into beaten egg, then press into panko/breadcrumbs to coat evenly. Place finished cakes back on the tray.

Pan-fry

Heat a large skillet over medium heat and add 1 tablespoon butter and 1 tablespoon olive oil. When shimmering and butter has stopped foaming, add crab cakes (work in batches if needed) and cook 3–4 minutes per side until golden brown and crisp and internal temperature reaches 145°F or hot throughout. Add remaining tablespoon butter and oil as needed between batches. Transfer cooked cakes to a paper-towel–lined plate and keep warm in a low oven (200°F) while finishing remaining cakes.

While the crab cakes chill, prepare the salad. In a medium bowl whisk together lemon juice, extra-virgin olive oil, honey, sea salt, and black pepper to form a bright vinaigrette. Taste and adjust acidity or sweetness.

Add the thinly sliced fennel, sliced shallot, and chopped capers to the bowl and toss gently to coat. Let sit 5–10 minutes so flavors meld and fennel softens slightly. Fold in chopped dill or microgreens just before serving for freshness.

Crispy Prosciutto

Preheat the oven to 375°F (190°C). Arrange prosciutto slices on a parchment-lined baking sheet without overlapping. Lightly brush or spray with olive oil. Bake 8–12 minutes until the prosciutto is crisp and slightly translucent; watch closely as thin slices can burn quickly. Remove and drain on paper towels. Break or trim into smaller shards to garnish crab cakes.

Lemon Curd

Cook curd

In a heatproof bowl set over (but not touching) simmering water (double-boiler), whisk together lemon juice, lemon zest, sugar, and eggs until smooth. Continue whisking constantly over gentle simmer until mixture thickens and registers 170–175°F on an instant-read thermometer, about 8–10 minutes. It should coat the back of a spoon.

Finish and cool

Remove the bowl from the heat and whisk in the cold cubed butter one piece at a time until fully incorporated and the curd is glossy and thick. Season with a pinch (1/8 tsp) of salt. Strain the curd through a fine mesh sieve into a clean bowl to ensure smoothness. Cover surface with plastic wrap to prevent a skin and chill until cool. Refrigerate until ready to serve; curd will thicken further as it cools.

Plating & Assembly

Place 2–3 tablespoons of fennel caper salad on each appetizer plate as a bed. Arrange 2 crab cakes on top of the salad (or 1 larger cake if preferred). Spoon a small quenelle or dot (about 1 tsp) of chilled lemon curd onto each crab cake or on the plate beside them for a bright, tangy counterpoint.

Top each crab cake with a shard of crispy prosciutto and a few microgreens or dill for color. Finish with a light drizzle of extra-virgin olive oil and an optional squeeze of fresh lemon. Serve immediately while crab cakes are warm and crunchy.
