Earl Grey Vanilla Cream Base
Brew and cool tea
Brew a strong Earl Grey: steep one tea bag or 1 tablespoon loose-leaf in 4 ounces of just-off-boil water for 4 minutes. Strain and cool to room temperature. If the tea is too concentrate for balance, dilute with a splash of cold water.
Combine base ingredients
In a cocktail shaker, pour 2 oz Ron Zacapa 23, 2 oz cooled Earl Grey, 0.5 oz vanilla syrup, and 1.5 oz heavy cream. If using egg white for silkiness, add 0.5 egg white now.
Dry shake
If you used egg white, perform a dry shake (shake without ice) vigorously for 10–15 seconds to emulsify and build foam.
Wet shake
Add a generous handful of ice (or a large cube) to the shaker and shake vigorously for 12–15 seconds until the shaker is cold to the touch and the mixture is well chilled and slightly diluted.
Double strain
Double-strain the cocktail into a chilled coupe or Nick & Nora glass (or over a large ice cube in a rocks glass if you prefer). Double straining (through a fine mesh) removes ice shards and tea bits, yielding a silky texture.
Finishing & Aromatic
Garnish and aromatics
Express a strip of orange peel over the surface to release oils and rub it around the rim if desired, then drop it into the drink. Optionally grate a little vanilla or orange zest over the foam and float a star anise or a thin bergamot twist for an extra aromatic note.
Serve
Serve immediately while chilled. Sip slowly to appreciate the contemplative interplay of rum, bergamot from the Earl Grey, and smooth vanilla cream.
