Preparation
Clean oysters
Scrub the oyster shells under cold running water with a stiff brush to remove dirt and barnacles. Discard any shells that are cracked or that do not close when tapped.
Arrange cleaned oysters on a tray, cup side down so the hinge faces away from you for easier opening after steaming.
Make sauces / seasonings
Soy-lime dressing
In a small bowl combine light soy sauce (1 tsp) with the soy-lime dressing (2 tbs). Add freshly ground black pepper to taste (about 1/4 to 1/2 tsp). Add a squeeze of half a lime. Stir and set aside.
Garlic-butter sauce (optional)
Melt unsalted butter (1 tbs) in a small saucepan over low heat. Add smashed garlic cloves (from aromatics) and cook gently for 30–45 seconds until fragrant but not browned. Remove garlic pieces and keep butter warm.
Steaming oysters
Bring the water to a rolling simmer over medium-high heat. Place oysters on the steamer rack in a single layer, hinge side down and cup side down so they stay stable. Cover with a tight-fitting lid.
Steam oysters for 6–8 minutes for half-dozen-size oysters (slightly larger oysters may need up to 10 minutes). You are aiming for the shells to begin to open; do not overcook — oysters will become rubbery if steamed too long.
Shuck and season
Working one oyster at a time, use an oyster knife or a small sturdy knife to pry open any shells that are still closed. Insert the knife at the hinge and twist gently. Slide the knife under the top shell to cut the muscle and remove the top shell, keeping the oyster liquor in the bottom shell.
Taste and adjust: add a small pinch of kosher salt or a few drops of lime if desired. Garnish each oyster with a few cilantro leaves.
Serve
Serve immediately while hot on a platter lined with rock salt or crushed ice to stabilize shells. Provide lime wedges and extra sauces on the side.
Discard any oysters that did not open during steaming or that smell off.
