Prepare proteins
Pat chosen proteins dry with paper towels. For shrimp and oysters leave whole. For fish or tilapia cut into two similar pieces if not already portioned. Trim any excess fat from chicken tenders.
Season proteins lightly: sprinkle 1/2 tsp salt and 1/4 tsp black pepper across all pieces to give base seasoning (adjust if serving only delicate oysters).
Breading station
Set up three bowls
In bowl 1 combine flour with 1/2 tsp salt, 1/4 tsp black pepper, 1/4 tsp garlic powder, 1/4 tsp onion powder, and 1/4 tsp paprika. In bowl 2 whisk eggs with milk. In bowl 3 mix cornmeal and panko with remaining 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/4 tsp paprika and optional cayenne.
Frying
Heat oil
Pour vegetable oil into a heavy skillet or deep frying pan to a depth of about 1/2 to 1 inch (or use a deep fryer). Heat to 350–365°F (175–185°C). If you don't have a thermometer, heat until a small piece of bread sizzles and browns in about 30–45 seconds.
Fry proteins in batches without overcrowding. For the described portions (5 shrimp or oysters; 2 fish or tilapia pieces; 2 chicken tenders) plan 2 batches so the oil temperature stays steady.
Cooking times (approx): Shrimp 2–3 minutes until golden and opaque; Oysters 2–3 minutes until crisp and lightly golden; Fish fillets or tilapia pieces 3–5 minutes per side depending on thickness until flaky and golden; Chicken tenders 4–6 minutes until internal temperature reaches 165°F (74°C) and crust is deep golden. Flip as needed for even browning.
Use a slotted spoon or spatula to transfer cooked pieces to a wire rack set over a baking sheet or paper towels to drain. Keep warm in a 200°F (95°C) oven if cooking in multiple batches.
Finish & assemble (split order into two halves)
Arrange the two chosen proteins on a plate, splitting the full order into two halves as described: when one chosen protein is shrimp or oysters use 5 pieces for that protein; when chosen protein is fish or chicken provide 2 pieces. If both chosen proteins are of the same type, portion so each half receives an appropriate share (e.g., if both are fish, each half gets 2 pieces).
