Method
Mussels
Inspect mussels and discard any with cracked shells or that do not close when tapped. Rinse mussels under cold running water and scrub shells to remove debris. Remove beards by pulling toward hinge; trim with a knife if needed.
Place cleaned mussels in a bowl and pour 2 cups cold water over them to check for any remaining grit; lift mussels out rather than pouring water back over them. Drain and set aside on a tray.
Buttery Garlic Sauce
Add white wine and lemon juice; increase heat to medium-high and simmer 1–2 minutes to reduce slightly. Season with salt and pepper and stir in chopped parsley.
Crafty Cajun Sauce
Stir in Cajun seasoning, smoked paprika and hot sauce (if using) and cook 30 seconds to bloom the spices. Add stock and bring to a simmer.
Add the cleaned mussels, cover, and steam 4–6 minutes until shells open. Shake pan occasionally. Remove lid, taste sauce and adjust salt or heat; simmer 30–60 seconds to thicken slightly if needed.
Sprinkle chopped parsley over mussels and serve with crusty bread or fries to soak up the sauce.
Lemon Pepper Sauce
Add lemon zest, lemon juice and white wine (if using). Stir in coarsely ground black pepper and salt. Let the sauce come to a gentle simmer for 1 minute.
The Boom Sauce
Stir in soy sauce, honey, sambal (start with 1/2 tsp and adjust for spice), rice vinegar and sesame oil. Bring to a gentle simmer for 1 minute so flavors meld.
Add mussels, cover and steam 4–6 minutes until shells open. Uncover, toss gently to coat, and finish with sliced scallions and toasted sesame seeds. Taste and adjust heat or sweetness as desired.
