Live Blue Crabs & Prep
Rinse the live blue crabs briefly under cold running water to remove debris. Keep them in a cool place or on ice until ready to cook.
Optional humane dispatch: place crabs in a freezer for 15–20 minutes to sedate before cooking.
Fill a large bowl with ice and water and set aside for an ice bath to stop cooking after steaming.
Steaming Broth
Pour 6 cups of water into the large pot. Add 1 cup apple cider vinegar, 3 tablespoons Old Bay (or seafood seasoning), 1 tablespoon whole black peppercorns, and 2 bay leaves. Halve the lemon and squeeze in the juice; drop the halves into the pot.
Add 1 cup sea salt directly to the broth or, if using a steamer basket, sprinkle salt into the bottom liquid—this produces a well-seasoned steam. Bring the liquid to a rolling boil over high heat with the steamer basket in place.
Using tongs, pick up each crab by the back shell and place it in the steamer basket in a single layer. If necessary, stack crabs gently but avoid overcrowding so steam circulates.
Cover the pot and steam: cook 12–15 minutes for 6 medium crabs (about 1–1¼ lb each). Crabs are done when shells turn bright orange-red and meat is opaque. If crabs are smaller, check at 8–10 minutes; larger crabs may need up to 18 minutes.

Garlic Butter
In a small saucepan over low heat, melt 6 tablespoons unsalted butter. Add 2 teaspoons minced garlic and warm gently for 1 minute until fragrant; do not brown. Remove from heat and stir in 2 tablespoons chopped parsley and 1 tablespoon lemon juice. Keep warm for dipping.
Mustard-Dill Dipping Sauce
In a small bowl combine 1/4 cup mayonnaise, 2 teaspoons mustard, and 1 teaspoon hot sauce (optional). Taste and adjust with a pinch of salt or a squeeze of lemon if desired.
To eat: remove the top shell by pulling back and discarding the gills (dead man’s fingers). Break the body in half and pick meat from the cavities and legs. Crack claws with a mallet or shears and dip meat in sauces.
