    Prepare wings

    If not already separated, separate whole wings into drumettes and wingettes and discard tips or save for stock. Pat the wings very dry with paper towels—removing surface moisture is critical for crispiness.

    Trim and score

    Trim excess skin or small bits of fat. Lightly score the skin on the thicker parts with a shallow knife-cut (do not cut through meat) to help render fat.

    Season and coat

    In a large bowl, toss the dried wings with kosher salt, black pepper and baking powder until evenly coated. If using the Dry Seasoning, add garlic powder, onion powder, smoked paprika and cayenne pepper and toss again to distribute evenly. The baking powder raises pH and helps crisp the skin during cooking.

Cooking

    Preheat oven to 250°F (120°C). Place a wire rack on a rimmed baking sheet and arrange wings in a single layer skin-side up, leaving space between pieces. Bake at 250°F for 30 minutes to render fat. Increase oven temperature to 425°F (220°C) and continue baking for 35–45 minutes more, flipping once halfway through the second stage, until skin is deep golden brown and crisp. If desired, brush lightly with vegetable oil before the high-heat stage to encourage browning.

    Shallow fry or pan-finish option (for faster crisping)

    Heat 1 to 2 tablespoons vegetable oil in a large heavy skillet over medium-high heat. When oil shimmers, add wings in a single layer (work in batches to avoid crowding). Cook 4–6 minutes per side until deeply browned and internal temperature reaches 165°F (74°C). Transfer to a wire rack set over a sheet pan to drain and stay crisp.

    Deep fry option

    Heat neutral oil in a deep fryer or heavy pot to 350°F (175°C). Fry wings in batches for 8–10 minutes until golden and crisp and internal temp is 165°F (74°C). Drain on a rack or paper towels.

Finish & Serve

    Rest and season

    Let wings rest 3–5 minutes on the rack to allow juices to redistribute. Sprinkle with chopped parsley and a light squeeze of lemon if desired. Taste and adjust salt if necessary.

    Serve

    Serve immediately with your favorite dipping sauce (about 1 cup total) and lemon wedges on the side. Provide napkins and a small bowl for discarded bones if serving family-style.
