Prepare Oysters

    Clean

    Rinse the oysters thoroughly under cold running water to remove dirt, sand, and debris. Use a small stiff brush to scrub the shells. Discard any oysters with cracked shells or that do not close when tapped.

    Chill

    Place the cleaned oysters in the fridge or on ice for at least 20–30 minutes before shucking to firm up the meat and make shucking safer.

    Shuck

    Set a thick kitchen towel or glove on a stable surface. Hold the oyster cupped side down (to retain liquor) with the hinge facing you. Insert the oyster knife into the hinge, twist gently until it pops, then slide the blade along the top shell to cut the muscle. Remove the top shell and discard. Run the blade under the oyster to detach the bottom muscle, taking care to preserve the oyster liquor (the briny liquid) in the shell. Place each shucked oyster on a bed of crushed ice immediately to keep cold.

Assemble Serving

    Spread the crushed ice evenly on a shallow serving tray or bowl to create a stable bed and keep oysters cold.

    Nestle each shucked oyster (still in its bottom shell with liquor) into the ice, arranging them in a single layer so guests can easily pick them up. Sprinkle the ice lightly with the sea salt to help stabilize and lightly season the display.

    Slice the lemons into wedges (about 8–10 wedges from 2 lemons). Arrange lemon wedges in small clusters on the ice near the oysters.

    Place the cocktail sauce in a small bowl and set it on the ice bed. If serving horseradish, place it in a separate small bowl so guests can add to their sauce to taste. Put the saltine crackers in a side bowl or stacked on the tray (kept dry).

Serve & Eat

    Keep the oysters on ice and serve immediately. Provide small forks or picks if preferred. To eat: use the fork to loosen the oyster if needed, squeeze lemon over the oyster, add a dab of cocktail sauce or horseradish if desired, then tip the shell and slurp the oyster with its liquor.

    Discard any leftover oysters that have been held at room temperature for more than 2 hours. Keep refrigerated and consume within the same day for best quality and safety.
