Steak Preparation

    Season the Steak

    Pat the ribeye steaks dry with paper towels. Drizzle olive oil on both sides and rub it in. Sprinkle salt, black pepper, and garlic powder evenly on both sides.

    Cook the Steak

    Heat a cast-iron skillet over high heat until very hot. Place the steaks in the skillet and sear for about 4-5 minutes on each side for medium-rare. Add rosemary sprigs during the last minute of cooking for added flavor.

    Rest the Steak

    Remove the steaks from the skillet and let them rest on a cutting board for at least 5 minutes before slicing.

Frites Preparation

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick. Rinse the cut fries in cold water to remove excess starch, then drain and pat dry with paper towels.

    Heat the Oil

    In a large, heavy pot, heat the vegetable oil over medium-high heat until it reaches 325°F (160°C). Use a thermometer to ensure the right temperature.

    Fry the Potatoes

    Carefully add the fries in small batches to the hot oil. Fry for about 4-5 minutes until they are soft but not browned. Remove and drain on paper towels.

    Final Frying

    Increase the oil temperature to 375°F (190°C). Fry the potatoes again in small batches until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels, then sprinkle with salt.
